Detoxifying Arugula Watermelon Feta Salad with Mint

Ingredients
  • 4 Cups Arugula lettuce
  • 2 Cups cubed watermelon
  • 1 Cup chopped broccoli
  • 1 Cup chopped cauliflower
  • 1 Cup diced tomatoes
  • 1 Cup cooked quinoa
  • 1/2 Cup chopped green onion
  • 1/2 Cup pumpkin seeds
  • 2 hard boiled eggs chopped
  • Dressing Ingredients:
  • 2 cups organic watermelon large chunks
  • 3/4 cups organic extra-virgin olive oil
  • 2 tablespoons organic apple cider vinegar
  • 2 tablespoons organic maple syrup or your favorite liquid sweetener
  • 2 organic dates
  • 1 - 2 pinch Himalayan pink salt
Instructions
  1. For the salad, mix all together and top with the watermelon dressing.
  2. Dressing instructions:
  3. Add all ingredients for the vinaigrette into a blender and blend until well combined.
  4. Drizzle over salad.
  5. Enjoy!
