Beet Kvass
Ingredients
  • 3 medium organic beets
  • ΒΌ cup juice from probiotic pickles or a fermented vegetable
  • 1 tablespoon sea salt
  • Filtered water
  • 2 quart Mason Jars
Instructions
  1. Peel and wash your beets. Organic you do not need to peel.
  2. Chop beets into medium size pieces.
  3. Place beets in bottom of your jars. 1/2 into one jar, 1/2 into another, or all into a half gallon.
  4. Add your pickle juice and salt and dissolve.
  5. Fill jar with your water.
  6. Cover with a coffee filter and secure with a rubber band.
  7. Keep in a dark place for 2 days.
  8. Place in your refrigerator.
  9. Drink 4 ounces in the morning and 4 ounces before bed.

Spoon off any white scum that appears on top.
