Detoxifying Arugula Watermelon Feta Salad with Mint
This is our favorite end of summer salad. Arugula Watermelon Feta Salad with Mint is filled with our favorite farmers market finds like broccoli, arugula, fresh mint, and farmers feta cheese. This salad we like prepping on Sunday and filling our Tupperware with a nice cupful to go with our proteins like chicken and tuna. Arugula is the lettuce of choice for us. Also called salad rocket or garden rocket, it has a distinctive and peppery flavor. Leafy greens like arugula are a great source of alkalizing and detoxifying chlorophyll. Start introducing more high chlorophyll foods like arugula in the meals and you will have increased energy.
This watermelon salad with feta even looks pretty on the table! Broccoli and cauliflower have a lot of great nutritional value as well! One serving of cauliflower contains 77 percent of the recommended daily value of vitamin C. It’s also a good source of vitamin K, protein, thiamin, riboflavin, niacin, magnesium, phosphorus, fiber, vitamin B6, folate, pantothenic acid, potassium, and manganese. The presence of vitamin-C, sulphur and certain amino acids make broccoli a very good detoxifier. - 4 Cups Arugula lettuce
- 2 Cups cubed watermelon
- 1 Cup chopped broccoli
- 1 Cup chopped cauliflower
- 1 Cup diced tomatoes
- 1 Cup cooked quinoa
- ½ Cup chopped green onion
- ½ Cup pumpkin seeds
- 2 hard boiled eggs chopped
- Dressing Ingredients:
- 2 cups organic watermelon (large chunks)
- ¾ cups organic extra-virgin olive oil
- 2 tablespoons organic apple cider vinegar
- 2 tablespoons organic maple syrup (or your favorite liquid sweetener)
- 2 organic dates
- 1 - 2 pinch Himalayan pink salt
- For the salad, mix all together and top with the watermelon dressing.
- Dressing instructions:
- Add all ingredients for the vinaigrette into a blender and blend until well combined.
- Drizzle over salad.
- Enjoy!
