Bloody Mary Skewers

Headed out to my mom’s house over the weekend and always love bringing fun appetizers so we can catch up and nosh on light appetizers.  I also love my Bloody Marys on Sunday afternoons, probably because we were out and about the night before.  Thus I love my detox drinks too!  I decided to make some fun Bloody Mary Skewers for our drinks.  We drink them out of mason jars so the sticks fit perfectly.   I am a big spicy Bloody Mary kind of girl

Chicken, Greek Yogurt and Spinach Roll ups | skinnyover40.com

Chicken, Greek Yogurt & Spinach Roll ups

How can I not have some sort of Roll Ups to go with the Bloody Marys?  I don’t eat much deli meat any more but my mom does like her chicken breasts.  I bought some organic peppered chicken breast from Whole Foods.  I started with a fancy tortilla and added Greek Yogurt as the dressing.  I sprinkled curry powder and crushed black pepper over the Greek Yogurt.  I than added a bit of shredded cheese then layered spinach leaves and topped it off with the organic chicken breast.  Rolled it up and of course had to try a few.  Tasted so fresh.  Oh I forgot, I added half of a lemon to the Greek Yogurt.  Very citrusy.

Crab and Avocado Sushi |skinnyover40.com

Crab and Avocado Sushi

Cannot head to moms with out Sushi!  This is a pretty basic Sushi.  We buy imitation crab because it is so easy to slice into the perfect thin strips.  We add in the avocado, english cucumber and sliced carrot sticks.  I made the Sushi Rice first which is another post in the making.  In the middle of the roll we created our spicy mayonnaise.  Organic Mayonnaise mixed with a spicy chili sauce and wasabi.  I always want to say Wass Up? in a funny voice when I right Wasabi. :-)
