Skinny Bruschetta
I admit it, I eat things called “Skinny” Foods. My wife named this blog Skinny Over 40 because she wants everyone to get the low down, skinny on eating healthy and living a healthy lifestyle. We are big Marinara eaters, we make a good Low Sodium Marinara Sauce that I will include at the end of this recipe.
We love appetizers that are easy and filling but still on the healthy side. This Bruschetta is made with juicy tomatoes, fresh basil, red onions and chicken to give us the added benefit of protein to stay full longer. I have a bad habit of over eating as a guy. My wife catches me eating lots of snacks at night so staying full longer is a good thing for my weight.

Easy Bruschetta is a great snack that is still on the healthy side.
Ingredients
- I can White Chicken Breast
- 8 plum tomatoes, diced
- 2 cloves garlic, minced
- 1/4 small red onion, chopped
- 1 tbsp extra virgin olive oil
- 3 tbsp balsamic vinegar
- 6-8 fresh basil leaves, chopped
- freshly ground black pepper to taste
- 16 oz baguette or French bread
- 1-2 garlic cloves, peeled
- Lite Parmesan cheese
Instructions
- Mix all ingredients together
- Warm the Low Sodium Marinara
- Top the bread with the mixture and parmesan cheese
- Bake at 350 Degrees for 30 min
