Quinoa
Red Quinoa is heart healthy and an excellent source of healthy fiber. Red Quinoa is rich in magnesium and Vitamin B9 with 25% daily value, a good source of protein, iron, thiamin B1, riboflavin B2, and vitamin B6, very low sodium, saturated fat and cholesterol free. This sure sounds like a healthy, gluten-free hearty grain to add to my diet. Quinoa was first cultivated over 7,000 years ago near the equator in South America this grain was the staple grain of the Inca, Maya, and other native Americans for centuries. I like the idea of understanding the history of the food on our plates.
My husband and I are looking at eating foods that are Gluten Free for purposes of inflammation in our bodies. We want to see if we notice a difference in our overall health and our skin. Dave and I are eating really clean as well. Dave was pretty excited to get below 200 pounds and is aiming for 180 pounds of pure muscle.
I have been saving Red Quinoa recipes to add to our weekly menu. I can use Quinoa in most any recipes that ask for white rice. We are working hard on being in tip-top shape for warmer weather. It is -20 degrees this morning, not loving this weather.
Quinoa was rated one of Americas Healthiest Superfoods for Woman by Health.com We are all about eating Superfoods. I took crunchy Romaine and placed the Red Quinoa Salad on top for a light and refreshing afternoon salad.
- 1 cup Organic Red Quinoa
- 1 Can Organic Black Beans
- 1 Can Organic Sweet Corn
- 1 pinch Sea Salt
- ½ cup Chopped Red Onion
- 1 Medium tomato Diced
- 1 Can Green Chilies
- 2 Tablespoons EVOO
- 3 Tablespoons Apple Cider Vinegar
- ½ Tablespoon Chili Seasoning
- Pinch of cayenne
- To make the dressing, mix the EVOO, Vinegar and Seasonings.
- Toss all your ingredients together and serve with chopped up Romaine Lettuce.
- Toss with Southwestern Dressing






I haven’t eaten much Quinoa. This recipes looks really great. I’ll have to try it.
I love Quinoa. We just had hamburger soup, made with Quinoa. This salad looks delicious.

I’ve never heard of red quinoa, though I am a quinoa fan. You just can’t beat some all those health benefits!

I still haven’t really gotten into quinoa but this is definitely an interesting recipe. I’m sure the cool salad pairs nicely with the spice you have included.
I’m starting to get into quinoa a little more. Great recipe!
