One of my families favorite taco recipe is the Fish Taco.  We make something with a spicy kick a few days a week minimum.  Now that it is just Dave and I living together I am learning to make smaller batches of food for dinner.  Fish Tacos are easy to use for leftovers the next day.  The house smells so good with that touch of cumin aroma circulating the house.

We have been in the new apartment now a few weeks and I am settling in well.  I have a post coming up updating the decor :-) I cannot even explain how happy Dave and I are living in the city with so many bike and walking paths.  We are going to buy cross-country skis for the Winter to keep us active, do you cross-country ski?

So for the Tacos coat them well and place on a lined baking pan.

I bake these for about 20 minutes your oven could vary.

Easy Low Fat Skinny Panco crusted fish tacos.

Ingredients

  • One Pound Tilapia
  • Two Eggs
  • Cumin
  • Panko Bread Crumbs
  • Packaged Coleslaw
  • Coleslaw Dressing
  • Sriracha Sauce
  • Taco Shells
  • Taco fixins

Instructions

  1. Preheat oven to 350 Degrees
  2. Crack the eggs into a bowl scramble them up
  3. Run each thawed piece of Tilapia under cold water then place in egg mixture
  4. Place Panco Bread crumbs into a large bowl
  5. Coat each side of Tilapia
  6. Sprinkle with Cumin on both sides
  7. Place on sprayed tinfoil and place in a Preheated 350 degree oven
  8. Bake for approx 20 min depending on your oven.
  9. While the fish cooks make up your coleslaw
  10. Add your dressing to your liking. Some like it sloppy some like it crunchy.
  11. Mix in a few tablespoons of Sriracha
  12. Place the coleslaw on the bottom of the shell
  13. Break up the fish into nice bite size pieces and place on top of coleslaw.
  14. Top with your favorite taco toppings
  15. We use shredded iceberg, shredded Colby, tomatoes and onion.
  16. Enjoy!

    My husband is such a huge fan of fish tacos. I have never made them at home before, but maybe I should surprise him with this sometime soon!

    I love this! I liked how you baked the fish. It looks so delicious and now I want to make a fish taco, the panco looks wonderful as well. I never thought of that before.
