Leftover Corn Beef Egg Scramble
Leftover Corn Beef Egg Scramble
I love a good Corn Beef sandwich but usually my wife and I buy way more than we can eat. What to do with leftovers, right? Leftovers take over our fridge in a bad way. I love getting creative with leftovers and spices. I am a spice guru I must add. You will see a lot of spices in my recipes because we try to keep as much of the fat out as possible. In comes the Egg Scramble.
Corn Beef is not the healthiest choice, I know but it is one meat I love in the crockpot done after we get back from running all day on a Saturday. This dish I made while my wife was working and she said, wow, what do I smell in the kitchen? Oh, just your husband creating a breakfast with leftovers from last night. We usually end up making a dip with the leftover Corn Beef. This is a classic dip we usually prepare when we have a party.
The Slaw is an added bonus. This was added to the sandwiches, well that is my next post so stay tuned.

That sounds delicious. I think that would be a big hit with my family!

So many years this would have helped in my house – we always had corned beef and cabbage on St. Patrick’s Day and then leftovers for several days, which got very boring. What a great way to use them!

I would have never thought to put corned beef in scrambled eggs, but that looks delish. Now, to get some corned beef!

This sounds really tasty! I’m going to make it the day after St. Patrick’s Day. St. Patrick’s Day is the only time I make corned beef!

My husband loved corned beef. Next time we make it, I’ll have to set some aside to whip this up the next morning.

Corned beef in our house never lasts. It is rare we have leftovers when I make that or the non corned brisket. We always make boiled dinner/corned beef for St. Patrick’s Day. It a family tradition. Thankfully my own family enjoys the dish.

Oh wow I will definitely have to try this recipe! Perfect for St. Patrick’s Day!
