One of my favorite snacks to munch on our pickles. Making your own pickles could not be easier. When we lived on the farm we had an abundance of cucumbers, my wife made pickles a lot. We made many different varieties like sun pickles, probiotic pickles and sour pickles. The horseradish we grew in the garlic was a big part of pickle making.

Cucumbers are healthy too. Men need hydration just as much as the ladies do. Did you know that Cucumber’s have 96% water content which helps in keeping the body hydrated and regulating body temperature. It also helps in flushing out the toxins from the body.

Easy Refrigerator Pickles

Ingredients

  • Pickling Cucumbers or your garden variety.
  • Vinegar
  • Salt
  • One tablespoon Mustard Seed
  • Black Tea Bag
  • One Tablespoon Peppercorns
  • One Teaspoon Alum
  • One Teaspoon Dried Mustard
  • One Teaspoon Tumerac
  • One Tablespoon Garlic
  • One-Two Heads Fresh Dill
  • Heaping Teaspoon Horseradish
  • One tablespoon Chili Flakes
  • All Purpose brine
  • 2 Cups Vinegar
  • 2Cups Water
  • Two Tablespoons Pickling Salt

Instructions

  1. Cut your pickles in spears, or slices
  2. Make your Brine by adding liquids and salt, dissolve salt then cool
  3. Place in a bowl with ice water for a few hours
  4. The ingredients are the fun part, add more to your liking then follow a certain recipe till you get it the way you like it.
  5. Layer your ingredients into a quart or pint jar. You can use any sort of jar because these go in the fridge. I save all my mayonnaise jars so I can give these to the kids.
  6. Pack in the cucumbers leaving a bit of head space at the top.
  7. Use a butter knife and dip it around the jar to let out any air bubbles.
  8. Cover with your lid and place on counter-top one day then into the fridge.
  9. I usually wait about three days before eating.

    Yummy! I love making homemade pickles. Last year we didn’t do any canning because the rain ruined most of our garden. The year before my aunt dropped off buckets full of pickles from a local farmer friend and we canned over 100 pickles. Sure was fun!
