Fruit Salsa with Chickpeas
In my house we are addicted to salsa. Hotter the better actually. We have been eating a lot of Fruit Salsa living on Marco Island we have papayas and mango’s and kiwis all fresh at the Farmers Market. We pick up fresh Cilantro and fresh jalapeños too. Our Farmers Market is a weekly stop for us on Wednesdays. I love seeing all the fresh produce and talking with the vendors. I picked up lemons and avocados, from a local vendor don’t they look beautiful? I always leave with a few bags of fresh vegetables and fruit, what better way to get fresh healthy food.
We don’t like sweet salsa so the addition of jalapeños and the tomatoes and green chilies really makes this salsa perfect. I love adding the chickpeas in to give us some added protein. My husband is on a Paleo diet so if I make this dish I just omit the chickpeas. The papayas offer us all the Vitamin C we need along with a good source of potassium.
With it being the New Year we are starting it off eating smart. Add whole wheat tortilla chips to make this fruit salsa a really nutritious snack. Are you eating healthy to kick start your year?
Ingredients
- 3 Can Tomatoes and Green chilies
- 1 Can Green chilies
- 1 Can Chick Peas
- 1 can Corn and Pepper mix
- 1 Avocado
- Half Juice of 1 Lime
- 1 Mango
- 1 Nectarine
- Half Red Onion
- 1 or 2 jalapeños depending on your heat level
- One tablespoon garlic
- Dash of Sea Salt
- Cilantro
Instructions
- Chop all the ingredients
- Add the lime, garlic and sea salt
- Open all the canned items and add to the fresh chopped
