We moved down to Marco Island to live a life of adventure in and around the island. We love a good celebration, and Cinco de Mayo! We eat Mexican a few times a week and love using Delimex products. We are excited to celebrate Cinco de Maya with a few friends that we have met on the island. We picked up the Delimex Chicken and Cheese Taquitos, Beef and Cheese Taquitos and Beef and Cheddar Rolled Tacos along with a cute pinyata and a bright colorful table-cloth. We picked everything up at our weekly run to Walmart. Now we had to decide what we wanted to pair with the Taquitos and Rolled Tacos.
We decided to make a Poblano - Chipotle Peppers Creamy Dipping Sauce to add-on top of the Taquitos and rolled tacos. It is tangy with a little bit of spice. We grilled the Poblano pepper then de-seeded it. Then we simply added everything into the blender and blended.
This dip is SO easy to prepare, it is a perfect accompanied with the Beef and Cheddar Rolled Tacos.
It also can be drizzled on top of the Taquitos. Oh and the Taquitos and Rolled Tacos were so easy to prepare, we bought a pre-made red and green chili enchilada sauce from Walmart, added it on top of the Taquitos and Rolled Tacos, added a bit of cheese and baked for about 20 minutes, came out darn perfect.

Ingredients
- One Pint of Sour Cream
- One Poblano Pepper Grilled and Charred
- One Canned Chipotle Peppers in Adobo Sauce
- One Handful of Fresh Cilantro
- Juice of one Lime
- 1 Box Instant Spanish Rice
- 1 Bunch Cilantro
- Juice of 2 Limes
Instructions
- Grill the Poblano Pepper until charred
- Add all ingredients into a blender and blend until smooth
- Serve with Rolled Tacos and Taquitos
- Prepare your Spanish Rice
- Chop Your Cilantro
- Fold the Cilantro Into The Rice
- Fold in the Lime Juice
- Serve as a side dish with your Rolled Tacos and Taquitos
This Cinco de Mayo Mexican bar was perfect, everything turned out wonderful. Two different tastes of Taquitos and one Beef Rolled Taco along with the Spanish Cilantro Lime Rice and our Poblano - Chipotle Pepper Creamy Dip made the table look so festive!
We love celebrating with friends, relaxing and getting to know each other a bit better. Buy grabbing our Delimex products right out of the freezer I can get them prepared easily so there is time to enjoy our gathering. The Rolled Tacos still had a good crunch after coming out of the oven so they were very easy to dip into the sauce.
