Hearty Chicken and Collard Greens Soup is a low-fat, highly nutritious hearty soup for these cold Winter days. We make soup probably twice a week, once during the week and then on the weekend. Chicken Soup can be made 100 different ways. With noodles, with beans, with vegetables and well you have the idea. I love the smell of Chicken Soup simmering on the stove all day. We added home-made croutons to make the Chicken Soup very hearty and filling.
Chicken Soup is a great meal to eat when you’re trying to eat hardy and lose weight. You can add as many vegetables to it as you want along with more protein when adding beans. Chicken Soup is a great leftover too. Add it to a crust and make a Chicken Potpie. I love my memories of soup cooking on the stove all day or in the crockpot. Even though my mom was home all day she was very organized in the kitchen so she could spend time with my dad when he was home from work. Hope you enjoy!

Ingredients
- 2 pounds Chicken Thighs
- 3 Cups Collard Greens
- 1 Cup Spinach (Fresh)
- 1 Cup Carrots
- 1 Green Pepper
- 1 Onion
- 1 Cup Celery
- 1 Cup Kidney Beans
- 1 Cup Garbanzo beans
- Croutons
- 4 Cups Low Sodium Chicken Broth
Instructions
- Boil your Chicken Thighs in a few cups of water until just about done.
- Shred your Chicken and add back into the Chicken Stock.
- Add the vegetables
- Add the beans
- Add the Chicken Broth
- Simmer for a few hours
- Add Croutons right before serving.
