Kelp Noodles are a sea vegetable in the form of a needle. Just thinking about a vegetable that lives in the sea makes me want to eat them. Kelp Noodles are made of Kelp, Sodium alginate (which is sodium salt extracted from a brown seaweed) and water. Kelp Noodles are fat-free, gluten free and super duper low in carbohydrates and calories. They also provide a rich source of trace minerals. The noodles themselves are a different texture. Not slimy at all but sort of rubbery and very crunchy. There is not much of a taste to them. Kelp Noodles can be used in salads, stir fry’s, soups and casseroles. This is one of my all time favorite soups to have simmering on the stove in the Winter.  Chicken Tortilla Soup has a distinctive aroma when it is cooking all day.  It is truly a simple soup to make.  You can either use chicken right out of the freezer and  toss it in a pot of water, boil it, then pull it apart.  This gives you some good non salty chicken stock.  You can also take chicken right out of the can.  I boil a lot of my chicken a head of time and dice it up and freeze it so I can pull together different dishes during the week quickly and easily….

I am simply addicted to Baked Sweet Potato Chips.  They are easy to make and can help if you are craving something salty or spicy in the chip form.  These chips have a spicy cayenne pepper and crushed black pepper taste.  So much better than salt.  My hubby loves them.  When you bake the Sweet Potatoes they become sweeter.  Adding a hot spice really balances the taste.

We are picking up our food dehydrator this weekend from my son.  I am excited to experiment with more vegetables to make into chips.  I am a big Kale and Spinach eater you can check out my Spicy Baked Spinach leaves  recipe too!  Sweet Potato Chips are such a great alternative to your bagged chips off of the grocery aisle shelves.  Guilt Free and good for you!

Sweet Potatoes are high in Vitamin B6,  a good source of Vitamin C. They contain Vitamin D which is needed for the immune system and great for your body this time of the year. Sweet Potatoes also are a good source of Magnesium. This is a great Anti Stress mineral.
