Kosher Dill Refrigerator Pickles

One of our favorite snacks to munch on our pickles. Making your own pickles could not be easier. When we lived on the farm we had an abundance of cucumbers, my wife made pickles a lot. We made many different varieties of sun pickles, probiotic pickles, and sour pickles. The horseradish we grew in the garlic was a big part of pickle making.

Cucumbers are healthy too. Men need hydration just as much as the ladies do. Did you know that cucumbers have 96% water content which helps in keeping the body hydrated and regulating body temperature? It also helps in flushing out the toxins from the body.

Easy Refrigerator Pickles

Easy healthy refrigerator pickles can be done in 24 hours and the best part they are hydrating ans so good for you!

Ingredients
  • Pickling Cucumbers
  • 1 tbsp Kosher Salt
  • 2 tbsp Chopped Dill
  • 2 Cups White vinegar
  • 4 Cups Water
  • 1/2 Cup Sliced Onions
  • 1 tsp Cayenne pepper
Instructions
  1. Wash and dry two Quart size canning jars.

    Dissolve the water, vinegar, sugar, salt and spices on low then cool.

    Add your cucumbers to your quart jars, pack tightly.

    Add the brine leaving a little headroom.

    All the cucumbers should be covered in the brine, if you have lots of cucumbers or are making a big batch, make more brine.

    Place in the fridge for 24 hours.

    Yummy! I love making homemade pickles. Last year we didn’t do any canning because the rain ruined most of our garden. The year before my aunt dropped off buckets full of pickles from a local farmer friend and we canned over 100 pickles. Sure was fun!
