Leftover Corn Beef Egg Scramble

I love a good Corn Beef sandwich but usually my wife and I buy way more than we can eat. What to do with leftovers, right? Leftovers take over our fridge in a bad way. I love getting creative with leftovers and spices. I am a spice guru I must add. You will see a lot of spices in my recipes because we try to keep as much of the fat out as possible. In comes the Egg Scramble.

Corn Beef is not the healthiest choice, I know but it is one meat I love in the crockpot done after we get back from running all day on a Saturday. This dish I made while my wife was working and she said, wow, what do I smell in the kitchen? Oh, just your husband creating a breakfast with leftovers from last night. We usually end up making a dip with the leftover Corn Beef. This is a classic dip we usually prepare when we have a party.

The Slaw is an added bonus.  This was added to the sandwiches, well that is my next post so stay tuned.

Leftover Corn Beef becomes a meaty egg scramble.

Ingredients
  • Leftover Corn Beef
  • Eggs
  • Onion
  • Light Shredded Cheddar Cheese
  • 1 Tablespoon Olive Oil
Instructions
  1. Add the Olive Oil to your pan
  2. Chop the onions and add to the pan
  3. Shred the Corn Beef add into pan
  4. Saute for 10 min
  5. Add the eggs and scramble
  6. Add the Shredded Cheese
  7. Cook until they are done about ten minutes

    So many years this would have helped in my house – we always had corned beef and cabbage on St. Patrick’s Day and then leftovers for several days, which got very boring. What a great way to use them!

    Corned beef in our house never lasts. It is rare we have leftovers when I make that or the non corned brisket. We always make boiled dinner/corned beef for St. Patrick’s Day. It a family tradition. Thankfully my own family enjoys the dish.
