When I make lasagna I have to use the leanest hamburger I can find.  We make these several different ways by incorporating some sort of sausage or chicken but this recipe is only with lean ground beef.  It is comfort food at its best.  Serve with Noni Bread. Easy lasagna soup recipe has all the delicious flavors of homemade lasagna without all the work! Ingredients
  • 1 Batch Leftover Lasagna
  • 1 32 Ounce Can Tomato Juice
  • 2 Cups Ricotta Cheese
Instructions
  1. Add the Tomato Juice into a large stockpot.

    Add the leftover Lasagna into the pot.

    Then the ricotta cheese

    Simmer for 30 minutes

    ENJOY!

    What a nifty idea. I usually only make my lasagne when I’m feeding 8-10 people, and there are still leftovers. I can see this being a good alternative to freezing it and discovering it months later 😉

      Haha I know, I just through so many frozen leftovers out when we moved, all freezer burnt.

    Nothing could be easier or better. I did not add the ricotta because I had enough in my lasagne, but that’s something that’s according to taste. I also tossed in about 1 cup of fresh, julienned basil, but that’s only because I have so much of it from a prolific basil plant. I will make this over and over again. I had about 8 cups of leftover lasagne and the consistency was perfect. There were edges of the lasagne that were dried out and I added those, too–they rehydrated during the cooking. Five stars!
